Ruby, red cherry, tangerine and flint — silky and bright. Pinot noir that grew up in the wrong part of the country. Never got the memo. Doesn't care.
Serve & pair
Keep your pairings light. Lean meats, game and poultry, salmon or trout with reduced sauces over cream based ones. And for the adventurous ... wait for it. Try it with sushi. The lightness and acidity can handle raw fish beautifully.
How it was made
From 3ha of 30 year old vines in Loire Valley's Sancerre planted on siliceous clay, and gravelly limestone. Grapes are entirely de-stemmed. Fermentation lasts 2-3 weeks. Pumped over twice per day. Racked into 400L barrels for 1 year. Bottled unfiltered.
