How it was made
This wine is not made in the cellar. It's made by it. The cellar is the same stone it's grown in. Vines growing on clay over tuffeau. A cellar carved in tuffeau. Grapes are harvested early in the morning, fermented at low temperature in stainless tank then aged on fine lees.
Producer
In the Champalou family, they have been winemakers for 13 generations on the Cathrine's side and 7 generations on Didier's side. It is therefore the farmer's blood that flows through their veins because, while being winemakers, they are above all farmers. Their daughter Céline now runs one of the appellations most beloved estates, guided by history, nature and "the rock," the soils of tuffeau limestone.
