Mourvèdre's dark and smokey signature — on a bright crunchy frame, black fruit, leather, wild herbs. Revolution brings an almost "ethereal weightlessness" with soft tannins galore.
Serve & pair
Revolutions fruit-forward style is more versatile than the appellations heavyweights. Herb-crusted rack of lamb, NY strip, braised beef stew, venison, duck or chargrilled meats. Mushroom dishes, caramelized onion flatbreads and washed-rind cheeses. Ibérico ham. Sourdough. A little olive oil.
How it was made
Winemaker Agnès Henry has farmed organically throughout her 30+ years at the estate, and the domaine has been working with biodynamic treatments since 2018. Fermented in open-top cement vats with occasional pump-overs. A traditional low-intervention approach that favours gentle extraction is employed.
Producer
The vineyards of Domaine de la Tour du Bon sit atop a limestone plateau in Le Brûlat du Castellet, in the northwestern corner of the Bandol AOC, just about half a mile inland from the Mediterranean. Tour du Bon is one of the earliest-ripening spots in the appellation, thanks to the combination of altitude, exposure, and limestone/sandy terroir.
