Deep cherry and plum, crushed stone and violet lift — structured yet juicy. The very essence of it's geography. It IS the appellation.
Serve & pair
Keep the food simple. The wine is the reason you're at the table. A mushroom and tarragon omelette, a simple pasta with tomato and basil. or lentil soup with thyme. or fondue bourguignonne.. Heck why not some grilled meat and veggies with a glug of good olive oil.
How it was made
The grapes undergo a thorough selection process in the winery to pick out only the healthy ones. The whole bunches undergo a spontaneous maceration with native yeasts, without being de-stemmed. Finally, the wine is bottled without chaptalisation or filtration and no sulphur is added
Producer
Jean Foillard. The guy who was making wine before "natural wine" was a word you could say out loud without getting stared at. It's 1980. A time when Beaujolais meant nouveau, bubble gum and commercial yeast. Jean took over his fathers 4 ha. The influencers. Jules Chauvet, the late Marcel Lapierre, JP Thévent and Guy Breton. The last three, his "party buds" that went on an adventure.that became a thing. A wine movement before it became a trend. Now it's a legacy that continues to unfold.
